Made fresh each week this is a very versatile, light, clean and lemony flavoured cheese. It can be used in a multitude of ways, use it for making pasta sauces, risotto, dips, ravioli, and of course cheesecakes, but best of all it is a lovely accompaniment to a cool glass of wine
It is also possible to freeze so you can re-portion into smaller amounts so you can always have some at hand at a few moments notice
